Dice the vegetables into cubes or smaller pieces after washing them
Add the cherry tomatoes in a blender
Blend them smooth without any water
Add the garlic, cucumber and bell pepper
Blend again until smooth
Blend once again after adding the chilli, basil and salt
Next goes the black pepper, avocado oil and lemon juice
Add some water to the mix if at any stage you feel it getting very mushy
Transfer to a large bowl and garnish with cucumber shaves, slit cherry tomatoes and spring onion greens
Refrigerate for an hour before serving
